How the work is structured

The engagement starts by clarifying the reason for the assignment, the objective and the data available. Depending on scope, this is followed by observation of the guest journey and a live shift, conversations with key roles, and review of SOPs, rotas, POS reports or complaint patterns. Findings separate causes from symptoms. Measures are then ordered by impact, effort and ownership.

Operational detail

Consulting starts by separating symptoms from causes. Delays in service may come from scheduling, unclear roles, an overly broad menu or weak handovers between departments. We therefore combine live observation with available figures, documents and conversations with the team.

POS reports show what happened, but not always why. Checklists show the intended process, not whether it still works at full load. Comparing data with the reality of the shift makes it clearer what should change immediately and what can wait.

Findings are translated into a concise working plan with priorities, ownership and checkpoints. Missing figures are not replaced with invented numbers, and material assumptions are stated explicitly. Management receives a basis for decisions rather than a collection of generic recommendations.

Decisions in daily operations

In practice, the work also separates immediate corrections from structural issues. A weak dinner handover may be stabilised quickly through a concise briefing, while recurring uncertainty about roles requires a different intervention. Findings are therefore ranked by frequency, guest impact, commercial relevance and the degree to which management can influence them. This prevents the output from becoming a collection of opinions. Owners and managers receive a working picture that helps them decide what should be corrected now, what belongs after the season and what does not justify further effort.
