What the review looks at

We review the full service flow: table and station logic, pre-shift briefings, communication between the dining room and kitchen, and available POS and food-cost data. Sales-mix analysis shows which dishes drive revenue and which genuinely contribute to margin. At the same time, we test whether the kitchen can produce the menu consistently at peak load and whether the service team can recommend it with confidence. Complaint handling and service recovery are built into the standard rather than treated as exceptions.

Operational detail

In a restaurant, quality and commercial performance are often lost at the interfaces: between the order and the kitchen, kitchen and pass, service and bar, and between the table and payment. We therefore review not only individual tasks, but also how information and ownership move from one role to the next.

Sales data is compared with food cost, portion size and production time. A popular dish is not automatically a strong commercial performer if it blocks the kitchen at peak times or contributes too little margin.

Complaints are treated as part of the operating flow. The team should know what it can resolve immediately, when a manager takes over and what information must be handed on. This reduces improvisation in the moments that have the greatest impact on the guest experience.
